Tomato Sauce

There are two things wrong with this eggplant parm for me , and I say just
for me . 1. way to thick. 2. skin is not taken off. Other then that looks
good.
Those types of eggplant are not as bitter. I have done it both ways soaking
and not soaking and there isn’t much difference. If you get the nice
Sicilian eggplants as you can see very little seeds (which is what is
usually bitter).

No need to salt. Slice eggplant, brush both sides with olive oil and grill
until soft. Then build your dish and bake. Guaranteed tender and not
bitter.

I just made this recipe for my family, WOW! I’ve never been able to make

understand and very very good! I’ll be cooking from your channel from now

Sorry. Eggplant has a bitter juice inside. For eggplant you have to salt
the slices and put them in a stainless steel colander with a weight on them
(a good heavy pot) and keep them there for 30 minutes to one hour. They
will release all their bitter juice. Wash them under running water and dry
the slices with paper towels. Then, and only then, proceed with the
recipe.
