Dhaba Style Egg gravy(Anda curry) Recipe
Egg curry is a very popular dish amongst the egetarians. This type of gravy we get in the dhabas with tandoori rotis. Prepare it at home and enjoy.Boiled eggs were cooked in a spicy onion-tomato gravy. The sweetness from onion and tomatoes blends exotically with the Garam masala and spice powders. The more the onions were, the tastier the dish turns out to be. A wonderful mix of sweetness and spiciness leaves through the tongue at every spoonful of rice and curry.
This egg curry is suppose to be the tastiest gravy according to my viewers.It is simple and yet taste like dhaba style.You also try it and enjoy the flavours for which we go to dhabas.
Ingredients
Boiled egg ……………………………….. 2
Boiled tomato & pureed ..……………… 4
Onion paste………………………………. 1 large onion
Ginger garlic paste………..…………….. 2 tsp
Whole garam masala ………………….. 2 bay leaves, few black peppers, 1 green cardamom, 3
Cloves, 1 inch cinnamon stick
Red chilli powder…….………………….. 3 tsp
Coriander powder………………………… 2 tsp
Garam masala powder…………………. 1/2 tsp
Turmeric powder……..………………….. 1/2 tsp
Salt………………………………………….. to taste
Green coriander leaves ……………… few
Method
1) Boil egg for 10-12 min.
2) Boil tomatoes for 5-8 min,peel the skin grind to a paste,run through a sieve.
3) Put a wok add oil,make a slit in eggs and fry till light pink.Remove them & keep aside
.
4) Put bay leaf,cinnamon stick,green cardamom, black pepper & cloves,add onion and fry till it truns little brown.Add ginger & garlic ,turmeric powder ,coriander powder and red chilli powder add little bit of water and min.Add tomato paste & add salt.Cook on medium flame till oil oozes.Put eggs and cook for 2-3 min. Add garam masala powder.Add water to get the req consistency.cover the lid& cook for 3-4 min.
5) Garnish with coriander leaves.Serve hot with roties or tandoori rotis.
