Crock-Pot Recipe: Zucchini with Eggplant, Mushrooms, Ground Beef, and Spaghetti Sauce

This is my recipe for zucchini made in the Crock-Pot slow cooker with eggplant, mushrooms, 93% lean ground beef or hamburger, and spaghetti sauce. It tastes a lot like spaghetti without the noodles and it’s a good way to put your zucchini to use. I think it’s pretty Heart Healthy and Weight Watchers friendly. If you’re watching your carbs, or eat gluten-free, give this recipe a try.
