Cranberry Orange Pistachio Crumb Bar Recipe

These Cranberry Orange Pistachio Crumb Bars are perfect on a holiday dessert table. They have a bottom layer of sweetened short crust pastry, that’s topped with a cranberry orange marmalade layer and a crumbly pistachio crumb on top. They have the flavor of a specialty pie, in a more convenient, easy to serve cookie bar. And because these bars are typically served in a smaller serving size than the other holiday cakes and pies you won’t totally wreck your healthy plan if you indulge in this one after the holiday meal.

Ingredients list:
• 2 1/2 cups gluten free Bisquick
• 1 ½ cups sugar, divided (1 ¼ cups & ¼ cup)
• 1 ½ tsp cinnamon, divided (1 tsp & ½ tsp)
• 1 cup cold diced butter
• 2 eggs
• 1 tsp vanilla extract
• ½ cup pistachios, coarsely chopped
• 1 cup orange marmalade
• 1 tbsp cornstarch
• 1 orange (the zest and 3 tbsp of the juice)
• 12 oz fresh cranberries, rinsed and drained

    Hi Garnett, these are pretty tart because of the fresh cranberries but
    there’s enough sugar and marmalade in the recipe to make them sweet enough.
    And I haven’t seen your videos in the YT window either. I don’t know if I
    just missed the name change or if it’s YT. Also, my avatar is new so you
    could be missing my videos because it is not familiar. Who ever knows with
    youtube.

    I buy the GF Bisquick right in my regular supermarket where they also sell
    the regular variety. I know that you can but it at amazon.com too. I also
    wanted to let you know that I listed some suggestions for replacing gf
    bisquick in a response to a comment on this thread below. I hope this
    helps.

    Bisquick is a pancake and baking mix made by the Betty Crocker company in
    the US. The ingredients listed on the box are: Rice flour, sugar,leavening
    (baking soda, sodium aluminum phosphate, monocalcium phosphate) Modified
    Potato Starch, salt, xanthan gum (in that order) My advice would be to try
    another gluten free self rising baking mix that might be advertised as a
    pancake or biscuit mix. (continued…)

    What is in gluten free buisquick? I don’t think they sell it in Canada. I
    really want to make these… They look so good. I can get all types of gf
    flours and flour blends.

    (continued) When I can’t get GF Bisquick, as a cup for cup replacement I
    normally use: 2/3 cup rice flour 1/3 cup potato starch ½ tsp baking soda 1
    tsp baking powder 1 tsp xanthan gum 1 tsp sugar ¼ tsp salt In an effort of
    full disclosure, I have tested this mixture in only some of the published
    recipes so although I’m confident it will work, I can’t guarantee it. I
    hope this helps.

    to YT window but It was`nt there at all , Ya YT made me change my name
