Cornmeal Fried Green Tomatoes
Food Ingredients:
3 medium green tomatoes (beefsteak types work well) salt 1 1/2 cups corn meal 1/4 cup flour 1/2 teaspoon salt 1/2 teaspoon garlic powder 1/2 teaspoon pepper 2 eggs 1/4 cup water
Recipe preparation:
1 Wash and slice green tomatoes into 1/4 inch slices 2 Sprinkle lightly with salt and let sit for 15 minutes on absorbent towels (optional, but allows the release of excess moisture for better sticking power for the coating) 3 Combine cornmeal, flour, salt, garlic powder and pepper in a small bowl 4 In another bowl, beat eggs and water 5 Dip tomato slices in egg mixture, then cornmeal mixture 6 Fry in hot oil until golden brown on each side 5 minutes on first side, 3 minutes on second.
