Guess what’s for dinner tonight? I was even going to buy a meat mallet.
Good thing I checked my supplies before I go shopping (rather than after,
like usual) because I already have one. I have some nice chicken breasts, a
real deal slab of parma, good mozza, cheating with some really good sauce
from my favorite “itallian” restaurant, and some nice fettuccine

    this soon!

who cares if its not served in italy it looks damn good. Go to italy eat
    their stuff and shut up.

  7. Shawna Tracy

This looks delicious, but I would prefer not to put the chicken on top of
the sauce. I would think the chicken would get too soggy from sitting in
    the sauce.

  8. Emanuele Fatti i cavoli tuoi

Well, that’s the point: in Italy there’s no recipe called chicken
parmigiana. No one here would tell you or prepare you something like this.
So please, stop calling this ‘classic italian’. This is 100% american food.

His Essence recipe is also in the book he did a while back about cajun
cooking. I made it to fill a canning jar like they do down south. Then it’s
ready for whenever you need it. The book also has a recipe for pepper jam!
    oh yeah!
