Lemon Boneless Chicken is a Chinese Restaurant classic. My version features pieces of chicken breast, lightly battered and fried until golden and crispy, then smothered in a tangy lemon sauce. Serve with rice or vegetables – Give it a go!

INGREDIENTS IN THIS DISH:

SAUCE:

250ml Chicken Stock (Chicken Broth)
Juice of 2 Small Lemons (About 1/4 of a cup)
2 Tablespoons of Caster (Super Fine) Sugar (double this if you want a sweeter sauce)
2 Tablespoons of Corn Flour (Corn Starch)

CHICKEN:

500g Chicken Breast Fillets (sliced into thin strips)
2 Tablespoons of Soy Sauce
2 Eggs
2 Tablespoons of Corn Flour (Corn Starch)

Preparation Time: 10 minutes (plus time to marinate chicken)
Cooking Time: About 10 minutes

SERVES 4

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC
