CHICKEN SWEET SOY SAUCE

Ingredients

1 tablespoon brown sugar
1 tablespoon honey
1 tablespoon soy sauce
4 boneless chicken breasts
Oil for deep-frying
2 tablespoons chopped garlic
1 teaspoon chopped green chillies
Salt to taste
3 tablespoon cornstarch
½ cup chicken stock
1 tablespoon sesame oil
½ teaspoon chopped ginger
1 teaspoon red chilli flakes
1 tablespoon chopped spring onion greens + for garnishing
1 tablespoon toasted sesame seeds + for garnishing

Method

1. Heat sufficient oil in a pan.
2. Cut chicken into medium cubes and transfer in a bowl. Add 1 tablespoon chopped garlic, green chillies, salt and 2 tablespoons cornstarch and mix well. Add some chicken stock and mix well.
3. Deep-fry chicken in hot oil till golden and crisp. Drain in absorbent paper.
4. To prepare sauce, heat sesame oil in a non-stick pan. Add ginger and sauté for 30 seconds. Add remaining garlic and sauté for a minute. Add remaining chicken stock, chilli flakes, brown sugar, soy sauce and honey and mix well.
5. Dissolve remaining cornstarch in some water to make a smooth slurry. Add to the sauce and mix well. Add salt and mix again.
6. Add fried chicken and mix well. Add spring onion greens and sesame seeds and toss to mix.
7. Serve hot garnished with toasted sesame seeds and spring onion greens.

Preparation time: 5-7 minutes
Cooking Time: 12-15 minutes
