Chicken Banh Mi (Vietnamese Sandwich Recipe)

For the Chicken:
Boneless Chicken thighs (Diane cooks five, enough for about five large sandwiches)
2 cloves garlic, crushed
2 tbsp sesame oil
1 ½ tbsp. of fish sauce
1 tsp salt
Mix this up and marinate your chicken for at least 30 minutes in the fridge.

For the Carrots:
Use a vegetable peeler for long strands of raw carrot, add rice wine vinegar and salt to taste. Just make as much carrot as you think wish. One carrot is more than enough for one sandwich.
Let it rest and soak in the pickle flavor.

Wash some fresh cilantro. Don’t cut the stems! The stems are packed with flavor and will fit perfectly in your sandwich.

Now to cook the Chicken:
Add a little sugar for crispy, caramelized chicken. Heat your skillet.
Add oil, then add your chicken. Cook until it is cooked through and has that nice caramelized glaze on the outside. Set it aside.

Now take whatever bread you have chosen to use. French loaves work great. Cut the bread, and slather one side with Sriracha Mayo (recipe link here: http://bit.ly/15XOoiB)
And the other side with your delicious homemade pate (recipe link here: http://bit.ly/11WJi1C).

Cut your chicken on a bias (diagonally), load it into your sandwich, put in your cilantro, top it with your pickled carrots. Slice it up however you wish, and enjoy that bad boy. Boom. You just made the ultimate Banh Mi.

    I would like to give a constructive comment on your “Banh Mi”. Carrots
    pickle is missing daikon radish or papaya(papaya is more expensive than
    daikon so most fast food prefer daikon only, but you can have three
    together) thinly sliced in vinegar, sugar(not salt). Salt removes excess of
    water from veggies. You put too much liver pate and missing cucumber, one
    to three slice of either Thai red pepper or jalapeno and Maggi soy sauce.
    Baguette needs to be toasted.
