    Usually the breasts are damp…. the egg wash doesnt stick too well. So the flour sticks to the breast, the egg sticks to the flour, and the bread crumbs stick to the egg. Standard breading sequence.
    Or… you can skip the flour step by drying the breast really really well…THEN the
    egg should stick. But trust me….it's more work that way.
