Chef John, I was recently in France and had the most divine quiche type
pie. It has a flaky crust and had a spinach, onion, ham/bacon and a small
amount of diced tomato. I’m pretty sure it had some eggs but not a lot that
it was like a traditional quiche. It also had a thick layer of bubbly,
golden cheese baked on top. Can you please fulfill by food wish?
rub with sesame paste before broiling. devour. your life is now complete.

Hey, Chef John. Sorry if this is a dumb question, but will this work with
parts of the chicken instead of half a chicken? Like with breasts,
drumsticks, etc.? Just wondering if the shape of the cut has anything to do
with how this method works.
Doesn’t look as tasty as the *broilers* that I can get at any take out in
