BETH’S THAI COCONUT SOUP RECIPE
Serves 2 as a main course
Ingredients:
2 cups (480 ml) of chicken broth
6 chicken tenders, sliced into small pieces
2 (14 oz) (806 ml) cans coconut milk
1 cup (240 ml) of straw mushrooms
1 tbs (12 g) brown sugar
3 tbsp (45 ml) fish sauce
3 limes, zest and juice
2 tsp freshly minced ginger
a few “shakes” of red pepper flakes
2 tbsp (30 ml) freshly chopped cilantro
METHOD:
Bring broth to a simmer, add chicken and cook. Add coconut milk, mushrooms, sugar, fish sauce, lime zest and juice. Red pepper flakes and cilantro.
Serve immediately

Life Hack: Never buy coconut milk. Always coconut cream.
Coconut cream = Coconut milk – some water. Just add water to coconut cream
and you have (wait for it…) coconut milk. Basically, never waste your
money with coconut milk. Just buy coconut cream and mix it with H2O. You
avoid buying water and save money.
Can you use soy sauce instead of fish sauce?

If you don’t like the smell of fish sauce, you can sub light soy sauce and
add MSG(accent). So… MSG is an amino acid. When fish break down, they
release amino acids. All proteins do this, which is why aged beef tastes
the way it does. MSG is NOT bad for you, and is naturally found in
tomatoes, potatoes, mushrooms, meats, and many aged cheeses. MSG has gotten
an undeserved bad rap because people don’t understand it, and it was scape
goated to explain headaches some people got from chinese food, which turned
out to be a kind of allergic reaction to soy products in some people since
alot of chinese foods are cooked with soy sauce. It was easier for them to
cook without msg than without soy sauce.

Loving your videos do far. Just wanted to point out that fresh thai
chillies are usually easily found in Indian grocery stores. You can also
find random Asian herbs like curry leaves etc at these stores which is a
decent substitute for keffir lime leaves.

can I use oyster sauce instead of fish sauce? it’s easier to find oyster

Made this the other day and it was delicious!!! You are right about the
fish sauce, it adds some extra distinct yummy flavour! I love this soup
because i can add whatever i want to the base like veggies or pasta and it
is still delicious! :)
my school serves thai coconut chicken soup for lunch and its orange….
maybe they add tomatoes? idk its delicious tho :P
