Beth's Foolproof Crepe

Yield: 10
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Ingredients

  • 1 cup (120 g) of All Purpose Flour
  • 1 tbsp (13 g) sugar
  • pinch of salt
  • 2 eggs, beaten well
  • 2 cups (475 ml) of milk
  • 4 tbsp (60 ml) melted butter
  • assorted jams for filling
  • powdered sugar for dusting
  • grapeseed oil for greasing pan (or some other non-flavored oil like vegetable oil or canola oil)
  • 1 (12 oz) (340 g) bag of chocolate chips
  • 2/3 cup (160 ml) heavy cream
  • 1 tbsp(15 ml) honey
  • 1 tsp (5 ml) of vanilla

Instructions

In a large bowl whisk together the flour, sugar and salt. Then pour in the milk, and whisk, then add the beaten eggs, and then add the melted butter.
Dab some grapeseed oil on a paper towel and liberally grease a non-stick skillet that measures 9 ½ inches at the bottom (total circumference of pan will be around 12 inches). Heat pan on medium high heat, until hot.
Ladle out 1 serving of batter with a standard sized soup ladle. Swirl batter around the pan, until it completely covers the bottom, but does not ride up on the sides. Your crepe will be easier to flip and remain more uniform in shape if you prevent the batter from riding up.
Once the batter looks dry on the top and the edges begin to turn golden brown, take a long , skinny metal spatula and slide it under all the sides, loosening it from the edge. Then raise up when side, gently grab it with your hands and flip!
Cook for 30-40 seconds on the other side until golden brown. Spread inside with butter and jam, or butter and fresh lemon juice, fold in half, and then in quarters. Sprinkle with powdered sugar on top. And serve immediately!

To make the chocolate sauce, melt chocolate chips and heavy cream in a sauce pan. Once melted add honey and vanilla. Stir to combine and serve warm over ice cream. Store in fridge, and microwave to re-liquify. Will last for a week in the fridge.

    Enjoy!

you have to flip the crepe if you want it to be all light yellow. if you
wait until it’s stiff enough to turn over, it’ll be browned like that.
i’ve watched a couple of these videos and beth’s presentation looks the
    most professional

Hi Beth. This morning I woke up and decided to follow your recipe on
making crepes for the first time. Initially, my first piece of crepe wasn’t
good and i think it was the temperature of the heat on the pan.. there
after, I kept practicing to control the amount of batter plus the heat, it
worked out so well. I am really so happy that I was able to serve my family
with your easy to follow recipes and serve them good yummy food too. Thank
you and I am one big fan of your food blog. Keep creating new recipes.
    Once again, thank you.

Hi Beth ! Your crepe looks amazing in the video but when I tried to do it
it turned out really bad 🙁 i had a problem with the butter because I put
it in the batter while it was still hot so it made lots of chunks . So i
tried to remove all the chunks and then put the butter when it wasnt hot
but it did the same thing :/ and when i put them on the stove the crepe
wasnt even cooked but burned on the outside :/ help

Thank you! Tried this and the crepes tasted really great! I initially used
a pan I thought was non-stick (but wasn’t) and it burnt badly, but once I
changed the pan it went a whole lot better. Super easy and yummy, thanks
    again!

I made these for my little sister and my mom this morning, they were quite
impressed! I’m a beginner in the “cooking world” so I didn’t know what to
expect. First of all, I burned the first crepe. But no worries, the others
turned out great! I was quite surprised by how delicious they were paired
with the butter and lemon (new favorite!). Thank you for sharing this
    fantastic recipe Beth! :)

How do I prevent those disgusting-looking air bubbles? I’m starting to
dread making crepes because those craters keep appearing and they give me
goosebumps!! I’m going to try this recipe, but I don’t know how to prevent
those unsightly air bubbles : O

If I have left over batter, for how long I can keep it in the fridge?? By
the way, I love love love your recipes!

I have not made crepes in years, but I will definitely try your recipe the
next time I make it. I love both sweet and savory versions (the French
bakery I worked at when I was younger, made amazing seafood crepes and
there was this one thing with alternating layers of crepes, cream cheese,
thin meats…I forget the name, but it was very rich). Thanks for taking
the time to show us how to do this.

    Hi Beth,

I just tried the crepes yesterday night and they were a huge hit! I served
them around a rotating chocolate fondue set with a lot of fresh fruits to
add on top and people had a lot of fun preparing them. I even doubled the
    dose. Marvelous!
