Barbary Duck Breasts
Food Ingredients:
2 duck breasts 1/2 teaspoon salt 1 teaspoon peppercorns, coarsely crushed 30 grams butter 1 teaspoon olive oil
Recipe preparation:
1 Preheat the oven to 200C/400F/gas 6. 2 Peel the skin off the breasts, sprinkle with the salt and peppercorns and pat down well. Heat the oil and butter in a grill pan until very hot then put in the duck breasts, skin side down. 3 Cook for 5 minutes if you like your duck rare or 8-10 minutes if you prefer them well done. (The cooking time will vary depending on the size of the duck breasts.) 4 Serve the duck breasts hot, sliced diagonally.
