    I find using at least two cheeses are better than using one cheese- one cheese makes the dish too one-note, even if it does taste great, I feel.

    He keeps on mentioning Wisconsin because he has sold out.  He is paid by a Wisconsin cheese board and once you accept their money you must do their biding.  I used to like this guy but now he just a sell out.
