Rhubarb Relish
Food Ingredients:
5 cups chopped rhubarb 5 cups chopped onions 2 1/2 cups cider vinegar 6 cups packed brown sugar 1 tablespoon table salt 1 teaspoon pepper 1 teaspoon ground cinnamon 1 teaspoon ground cloves
Recipe preparation:
1 Place rhubarb, onion and vinegar into large saucepan. 2 Bring to a boil over medium heat. Cook uncovered for 20 minutes, stirring often. 3 Add remaining ingredients and stir. 4 Continue to cook until thick, stirring often, about 30 minutes. 5 Pour into hot sterilized half pint jars to within 1/2 inch of the top. 6 Place sterilized metal lids on jars and screw metal bands on securely. 7 Process in boiling water bath for 10 minutes.
