I have recently discovered pickling, and am OBSESSED with learning new
variations! Thank you for showing that pickled eggs do NOT have to have
hot spices. I won’t eat hot spices because they hurt my mouth, but it
seems everyone else on YouTube believes pickles are MADE to carry ten kinds
of pepper-powered pain in them. YIKES!

I’m still learning, but I thought you might like to hear my success story:
I used rice wine vinegar, apple juice, and sugar to make a brine for sweet
baby bell peppers, cauliflower, and carrots. It was SO delicious! Very
sweet-n-sour, crispy and delicate. I ate those pickles up very quickly, so
I’m gonna use the leftover brine to try pickling eggs. Fingers crossed!
    It should be good. :D

I would very much like to come and live at your house! Do you statesiders
know of Sarsons pickling and malt vinegars? Staple diet of Britain since
    1794?!

Contrary to popular belief, eggs should be started in HOT boiling water,
not cold. Bring water to boil, gently place your eggs in, boil for 12
minutes, immediately dunk into an ice bath, and peel when most of the ice
has melted. It will amaze you how the shells just slip right off. I always
struggled with peeling eggs until I found this method on the Serious Eats
website. I can’t believe how 99% of the population boils eggs incorrectly.
    Love your recipe!

Oh, I forgot to ask… do you have a good recipe for pickling any sort of
meat? I’ve heard of pickling sausages, but would also be interested in
pickling chicken, pork, or beef. I intend to experiment a bit on my own,
but would love to hear your take on these things, if you’ve tried it.
