Moroccan Chicken Recipe

Ingredients:
2 and 1/2 pounds chicken parts
salt and pepper for the chicken
oil for browning the chicken
1 large onion
1 Tablespoon garlic
1 Tablespoon fresh ginger
1 Tablespoon ground cumin
1 Tablespoon ground coriander
1 and 1/2 teaspoons paprika
1/2 teaspoon turmeric
1/2 to 1 teaspoon cayenne pepper
3 cups chicken broth
1/4 teaspoon saffron
1/2 cup green olives
2 preserved lemons, flesh removed, using the rind only
fresh coriander/cilantro
