    Venezia has appeared on numerous televised cooking programs and has been praised by the likes of Gourmet Magazine, the Los Angeles Times, Food and Wine and the Zagat Survey.     INGREDIENTS:
    180 g Raw King Prawns
    1 Bell Pepper
    Handful of Cherry Tomatoes
    1/2 Courgette
    Bag of Fresh Salad
    1 tsp Crushed Chillies
    1/2 Lime, Juiced
    1 tbsp Fresh Coriander
    1 tsp Coconut Oil
    Handful of Raw Cashew Nuts
    1-2 tbsp Extra Virgin Olive Oil

    STEP 1: PREPARE SALAD
    Slice your courgettes and pepper into thin strips and halve your cherry tomatoes. Place into a large salad bowl with the fresh, washed lettuce leaves.
    STEP 2: COOK PRAWNS
    Add a tsp of coconut oil to a frying pan and leave to melt. Once melted add you prawns and fry for a few minutes. Add your crushed chillies and lime juice and mix into the prawns. Leave to cook until the prawns turn pink.
    STEP 3: FINISH, GARNISH AND SERVE
    Transfer the prawns to the salad bowl. Sprinkle over the cashew nuts and top with the olive oil and the chopped coriander. Serve.

    Two-Minute Calamari, Sicilian Lifeguard Style
    Serves 4

    Kosher salt
    1 cup Israeli couscous
    3 tablespoons extra-virgin olive oil, plus additional for serving
    2 garlic cloves, thinly sliced
    2 tablespoons pine nuts
    2 tablespoons currants
    1 tablespoon hot red pepper flakes, optional
    3 tablespoons Jalapeno Pesto (recipe follows)
    1/4 cup caperberries
    1 cup basic tomato sauce (recipe follows), or Mario Batali Marinara Pasta Sauce
    ¼ cup dry white wine
    1 1/2 pounds cleaned calamari, tubes cut into ¼ to ½-inch rounds, tentacles halved
    Freshly ground black pepper, to taste
    3 scallions, thinly sliced, white and green parts separated

    Bring 3 quarts of water to a boil and add 1 tablespoon of salt. Set up an ice bath nearby. Cook the couscous in the boiling water for 2 minutes, then drain and immediately plunge it into the ice bath. Once cooled, remove and set aside to dry on a plate.

    In a 12- to 14-inch sauté pan, heat the olive oil until just smoking. Add the garlic, pine nuts, currants, and red pepper flakes, if desired, and sauté until the nuts are just golden brown, about 2 minutes. Add the caperberries, tomato sauce, wine, and couscous and bring to a boil. Add the calamari and scallion whites, stir to combine, and simmer for 2 to 3 minutes, or until the calamari is just cooked and completely opaque. Season with salt and pepper, drizzle with olive oil, pour into a large bowl, sprinkle with scallion greens, and serve immediately.

    Basic Tomato Sauce
    Makes 4 cups

    1/4 cup extra-virgin olive oil
    1 large onion, cut into 1/4-inch dice
    4 garlic cloves, thinly sliced
    3 tablespoons chopped fresh thyme leaves, or 1 tablespoon dried
    1 tablespoon red pepper flakes, optional
    1 medium carrot, finely shredded
    2 28-ounce cans peeled whole tomatoes, crushed by hand and juices reserved
    Kosher salt, to taste

    In a 3-quart saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook until soft and light golden brown, 8 to 10 minutes. Season with salt. Add the thyme, red pepper flakes, if desired, and carrots and cook 5 minutes more, until carrot is quite soft. Add the tomatoes and juice and bring to a boil, stirring often. Lower the heat and simmer for 30 minutes until as thick as hot cereal. Season with salt. Sauce holds 1 week in the refrigerator or up to 6 months in the freezer.

    Jalapeno Pesto
    Makes 4 cups

    3 cups Jalapeno peppers, roughly chopped
    ½ cup sliced almonds
    ½ cup red onions, chopped
    Salt
    ½ cup extra virgin olive oil

    Place all ingredients in the food processor until pureed. Reserve leftover jalapeno pesto in the refrigerator for up to one month.

    How to Make Soft Pretzels – Alton Brown’s Recipe

    In this video, I make a double recipe of Alton Brown’s soft pretzels using a recipe that I found on the Food Network website. They turned out really well, although I couldn’t seem to find where to buy pretzel salt so I made do with some kosher salt. The link to the recipe is below if you want to try making them yourself! They’re really good wrapped around a hot dog and/or dipped in mustard.

    Ingredients
    350ml warm (43 to 46C) water
    1 tbsp sugar
    2 tsps salt
    1 package active dry yeast
    650g flour, approximately
    60g unsalted butter, melted
    Vegetable oil, for pan
    2.5L water
    130g bicarbonate of soda
    1 large egg yolk beaten with 1 tbsp water
    Pretzel salt

    Method
    1) Combine the water, sugar and kosher salt in the bowl of a stand mixer and sprinkle the yeast on top. Allow to sit for 5 minutes or until the mixture begins to foam. Add the flour and butter and, using the dough hook attachment, mix on low speed until well combined. Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes. Remove the dough from the bowl, clean the bowl and then oil it well with vegetable oil. Return the dough to the bowl, cover with plastic wrap and sit in a warm place for approximately 50 to 55 minutes or until the dough has doubled in size.
    2) Preheat the oven to 220C/Gas 8. Line 2 half-sheet pans with parchment paper and lightly brush with the vegetable oil. Set aside.

    3) Bring the 2.5L of water and the bicarbonate of soda to a rolling boil in a large saucepan or roasting pan.

    4) In the meantime, turn the dough out onto a slightly oiled work surface and divide into 8 equal pieces. Roll out each piece of dough into a 60-cm rope. Make a U-shape with the rope, holding the ends of the rope, cross them over each other and press onto the bottom of the U in order to form the shape of a pretzel. Place onto the parchment-lined half sheet pan.

    5) Place the pretzels into the boiling water, 1 by 1, for 30 seconds. Remove them from the water using a large flat spatula. Return to the half sheet pan, brush the top of each pretzel with the beaten egg yolk and water mixture and sprinkle with the pretzel salt. Bake until dark golden brown in color, approximately 12 to 14 minutes. Transfer to a cooling rack for at least 5 minutes before serving.

    CHICKEN SWEET SOY SAUCE

    Ingredients

    1 tablespoon brown sugar
    1 tablespoon honey
    1 tablespoon soy sauce
    4 boneless chicken breasts
    Oil for deep-frying
    2 tablespoons chopped garlic
    1 teaspoon chopped green chillies
    Salt to taste
    3 tablespoon cornstarch
    ½ cup chicken stock
    1 tablespoon sesame oil
    ½ teaspoon chopped ginger
    1 teaspoon red chilli flakes
    1 tablespoon chopped spring onion greens + for garnishing
    1 tablespoon toasted sesame seeds + for garnishing

    Method

    1. Heat sufficient oil in a pan.
    2. Cut chicken into medium cubes and transfer in a bowl. Add 1 tablespoon chopped garlic, green chillies, salt and 2 tablespoons cornstarch and mix well. Add some chicken stock and mix well.
    3. Deep-fry chicken in hot oil till golden and crisp. Drain in absorbent paper.
    4. To prepare sauce, heat sesame oil in a non-stick pan. Add ginger and sauté for 30 seconds. Add remaining garlic and sauté for a minute. Add remaining chicken stock, chilli flakes, brown sugar, soy sauce and honey and mix well.
    5. Dissolve remaining cornstarch in some water to make a smooth slurry. Add to the sauce and mix well. Add salt and mix again.
    6. Add fried chicken and mix well. Add spring onion greens and sesame seeds and toss to mix.
    7. Serve hot garnished with toasted sesame seeds and spring onion greens.

    Preparation time: 5-7 minutes
    Cooking Time: 12-15 minutes

    This easy clams casino spaghetti is a fusion between the classic appetizer, clams casino, and clams with linguine or in this case spaghetti. This dish came about when I was planning to make a quick spicy red clam sauce when I thought a red bell pepper might be a nice contrast to the hot peppers the sauce. Then I thought that maybe adding a little bacon would bring the flair of clams casino to the dish. But the best part about this one is that most of the ingredients come straight from the pantry shelves.

    Ingredients list:

    8 oz of gluten free spaghetti
    10 oz can of whole baby clams, drained with the clam juice reserved
    6 ½ oz can minced clams, drained with the clam juice reserved
    2 slices of thick cut bacon sliced into small strips
    1 red bell pepper, cut into thin strips
    2 cloves of minced garlic
    10 oz can of diced tomatoes with green chilies, drained
    1 tbsp olive oil
    2 tbsp butter
    1 tsp Italian seasoning
    salt and pepper to taste

    Generally, we eat only the Banana fruit and we avoid its stem, which provides many health benefits. The banana stem is a rich source of fibre and helps to detoxify our body.

    Whipping up deliciously healthy recipes is second nature to celebrated Mumbai-based Chef Vicky Ratnani. The most recent feather on Vicky’s hat is winning The Gourmand World Cookbook Awards (think Oscars of the cookbook world) for his book, Vicky Goes Veg by Vicky Ratnani.

    Here, Chef Vicky Ratnani teaches us the recipe for “Banana Stem Salad”. Banana stem can also be used to cook curry and soup. Ingredients used in this recipe are:

    Banana stem
    Lemon juice
    Spring onions
    Pomegranate seeds
    Red bell pepper
    Basil leaves
    Olive oil
    Green chillies
    Coriander
    Parsley
    Orange juice
    Mixed lettuce
    Rocket leaves
    Iceberg lettuce
    Sprouts
    Coriander
    Orange segments

    METHOD:

    1. In a pan, add water with lemon juice. Add chopped banana stem,
    sliced spring onions, pomegranate seeds, red bell pepper and basil
    leaves.
    2. In the meantime, add olive oil, green chillies, orange juice,
    coriander and parsley into a blender.
    3. Blend the mixture properly.
    4. Now, drain the water from the pan and the blended mixture to it.
    5. Add mixed lettuce, rocket leaves and iceberg lettuce. Mix well.
    6. Now, put the ingredients into a serving dish and garnish with
    orange segments and sprouts.
    7. The salad is ready to serve.

    PREPARATION TIME: 15-20 Minutes

    FRESH CREPES WITH ZUCCHINI AND BECHAMEL

    INGREDIENTS:
    3 x medium sized zucchini (chopped into cubes)
    2 x cloves of garlic
    2 x pinches of salt
    Extra virgin olive oil
    Parmesan cheese
    Provolone cheese (cut into small cubes)
    Bechamel Sauce
    Freshly made crepes (2 per person is recommended serving size)

    USTENSILS:
    Large deep fry pan
    Cheese grater
    Wooden spoon
    Tablespoon
    Rectangular Bessemer/Baking tray

    STEP ONE: PREPARE THE CREPES & BECHAMEL SAUCE

    Head to my “VINCENZO’S BASICS” section on the website and prepare these two very important ingredients:
    CREPES & BECHAMEL SAUCE
    Once these are ready, put them to the side and you can prepare your filling.

    STEP TWO: THE FILLING!

    1. Pre-heat the oven to 160 degrees
    2. Place the chopped zucchini in your fry pan and fill it with water until they are just covered.
    3. Put the pan on the stove at a medium heat and drop in both garlic cloves (peeled)
    4. Once the water evaporates, add 2 tablespoons of oil and mix well with a wooden spoon.

    STEP THREE: PUTTING IT TOGETHER

    1. Get a nice sized baking tray and place one of your crepes flat in the centre.
    2. Add a small portion of the zucchini to the middle of the crepe, place a small handful off provolone cheese cubes and some grated parmesan cheese.
    3. Scoop up a tablespoon of béchamel sauce and cover the filling.
    4. Fold the left and right side of the crepe into the centre so it is closed, then the top and the bottom. While still holding these down, gently turn the filled crepe over and spread a thin layer of béchamel sauce on top using the back of a tablespoon.
    5. Repeat this as many times as you like, putting the filled crepes one next to the other in rows in the baking tray.
    6. Before placing the tray in the oven, grate some more parmesan on top (to your liking)
    7. Place the tray in the oven at 160 degrees for approx. 3 minutes (or slightly longer if you prefer them a little crispier and slightly golden.


    HOW TO SERVE:

    1. Remove the zucchini filled crepes from the oven and using a spatula lift them out of the tray and on to individual plates.
    2. Place two on each plate leaving a thin gap between them.
    3. Get a spoon full of sautéed zucchini and place it through the middle in the gap, filling it in and binding the two together.
    4. If you are a cheese lover like me, you can add EVEN MORE parmesan cheese on top!
    5. Finish it off with a fresh basil leaf in the centre.
