Interview with Hubert Keller and How to Make the Best Burger Ever

Hubert Keller is one of America’s most acclaimed chefs. French born and trained in the art of French cuisine by the likes of Paul Bocuse (recently named the “chef of the century”), Chef Keller brought his culinary talents to America and opened world-renowned restaurants Fleur de Lys in San Francisco and Las Vegas and The Burger Bar in San Francisco and St. Louis. He’s known to TV viewers for his own Secrets of a Chef series on PBS and has appeared on Top Chef and Top Chef Masters on Bravo. We hooked up with the chef to talk about one of his favorite subjects: Building a great burger.

    I like my burgers just plain with homemade tomato sauce. Nothing else.

    When I started reading "Burger Bar", I thought it was strange that so little attention is paid to the bun. By the time I was done reading, I realized that it was because in any of the recipes, the bun was strictly optional. This guy is AMAZING. BTW Chef: I humbly disagree with you. The first burger was not served 100 years ago in St. Lois. It was served several thousand years ago in Rome. It was known as “Isicia Omentata”. So your history is a bit off, but your recipes are the best I ever had.

    I love HK. He is one of the few chefs whose recipes I can taste just by hearing them. If I am ever in Vegas, my first stop will be the Burger Bar.

    I had his burger at Fleur in Las Vegas, and it was hands down one of the best things I have ever eaten. He is an incredible chef! Take his tips!
