This is a Crock-Pot slow cooker recipe for spicy Mexican chicken soup. I used boneless skinless chicken thighs, red potatoes, a can of diced tomatoes, and a 1 pound bag of frozen peppers and onions, plus a few seasonings. I like Crock-Pot recipes because they’re easy.

    Sounds tasty. It is different than most soups too. I’m sure the spiciness
    added great flavor. You have a knack for creative cooking. I agree with
    Juanelo too. Oh, I love that chili garlic sauce, I used to buy it a lot.

    TinMan, I prefer thighs too because of the their greater flavor and moist,
    rich texture. Man, I must say you have a natural instinct for recipes! You
    just seem to have a feel for the amounts of spices! Everything seemed to
    turn out great! In the end, it looks as if you had enough to feed the
    Mexican army! Great job!
