    By a MILE the very best recipe on YT.  I just bake the chicken thighs in the oven and then use that grease for the roux, then don't waste the bones, etc.  Make your own stock in a pressure cooker.  Did you forget a bay leaf?  What about some tomatoes and file powder?   RED onions are totally unnecessary.  Your roux was perfect (color of a paper bag).  Still this is an A- in a sea of fails!  Great job!

    Your dutch oven is damaged due to high heat. You're suppose to keep it on low to medium tops. Otherwise the bottom will burn.

    Great recipe, but there are some ways you can save time and make it even better. Brown the sausage right after browning the chicken, and make the roux right in the pot with the excess oil as the base of your roux like you do already. The celery and garlic can be added with the peppers, onions, and okra as they sweat in the roux. Adding the stock and chicken back will reduce time you have to simmer the stock without losing any flavor. Love the addition of thyme, and great camera work too!
