    Don’t cover the ribs, that will boil them. She has no clue like most women.
    The best chefs are men because they are serious and study the art.

    Leave the celery out of hte pot htey are too much water and will prevent
    the carmelization. Add them at the end.

    People!!!!! make time and put the fatty sauce in the fridge while you do a
    bit of washing up, cause when it has cooled, the fat comes off in seconds
    with a spoon, is this pork or beef , by the way?

    I can not find your recipe for your Short Ribs need help.

    375F oven?!? Slow that to 275/250F (even 225F) and start in the morning so
    the collagen better melts. I’d also trim the fat-cap much tighter/ closer,
    salt & pepper the meat and sear without the flour. All you are doing is
    “caramelizing/ coloring the flour” and not the protein. Basic but further
    steps like this will make for a better dish.

    I don’t understand what the issue with using wine to cook is. Is it the
    alcohol fear? Someone who is very sensitive to the taste?…..I don’t know.
