Bake them on parchment paper-not foil. If you bake on foil it ruins your
baking sheet but the parchment paper comes right off. I DO , however, bake
them with foil wrapped around them that first 2 hours at 250.

my husband when he comes home. ( ribs are his favorite.)
The only baby back ribs they had at the market were a little on the thick
side. Should i leave them for 30 min longer while rapped?

Good LORD those ribs look so mouth watering. I have some baby backs in the
fridge now. Ill cook them tomorrow. I took some paprika, grated garlic,
brown sugar, cajun spice and cayenne pepper and rubbed it into the meat. I
will be using your basting technique after the 2 hour cooking phase.
Any real pitmaster would be ashamed.
These ribs are absolutely killer!! Definitely use whatever spice rub you
love and let it sit on the ribs overnight. Still test doneness but Chef
John’s times of 2 hours at 250 wrapped then glazed with sauce every 10
minutes x4 has been spot on for me. They rival any true bbq ribs minus the
smoke.
THESE WERE WONDERFUL and I only took them out once during that last hour at
350. I use brown sugar, garlic powder, thick teriyaki sauce and a tiny bit
of cayenne.
I made these ribs and dear god…they were absolutely ……AMAZING! i was
scared because i actually made 3 racks at the same time using this process.
but they came out SO. DAMN. AMAZING. i absolutely loved it. they came out
so tender and perfect.

It was really great, it was everything I wanted from ribs. It tasted great,
had a ton of nice flavors, just enough spiceyness. It was easy, were
properly cooked, and just like you said they weren’t overly tender. Thanks
a bunch for this recipe, it’s great.

Did these again last night with a bit of an Asian twist. Added 5-spice
powder to the rub, then mixed teriyake sauce, ginger and sesame into my bbq
sauce. Came out fantastic. And I have leftovers for today! Which took a lot
of willpower.
One tip – after un-wrapping, bake for several minutes without sauce, just
to ‘crisp’ them a bit. Then do the glaze-and-bake.
I just finished making this. I used the same method but different bbq
sauce. I’m sure my family will love it!

GUYS I HAVE A QUESTION: I have baby back ribs that are a little smaller and
thinner than the ones in this video…Do I slow oven cook it for 2 hours
still on 250 degree?? or LESS time because they’re smaller?? Is time a
major factor???

That silver skin has to go. Needs to be dry rubbed and cook at 300 degrees
for 2 1/2 hours and then baste and broil for ten minutes each side for not
chewy rubbery baby backs. Did this over the weekend and they melt into a
party in your mouth.
