That’s a ham hock. It’s not traditional, and I didn’t want to add it to the
basic recipe. I add ham hock to my pinto beans, and I think it made the
minestrone taste too much like bean soup. So I left it out in the
ingredients. Just ignore it. 🙂

the addition of homemade chicken stock–something you may already be doing
