Watercress Soup (Chinese)
Food Ingredients:
2 chicken thighs One bunch of watercress 1 cup baby carrots, chopped 1/2 cup dried red dates, pitted 1 tablespoon goji berries/wolfberries 5 cups of water
Recipe preparation:
1 Blanch chicken in boiling water for 2 minutes. Set aside. 2 Place water in a pot and bring to boil. 3 Place chicken, carrots, and red dates in pot. 4 Bring to a boil and then reduce the heat to low. Let it simmer for about an hour. 5 Add watercress leaves and wolfberries. 6 Continue letting it simmer for 20 minutes.
