Minute Recipe: Mini Croques-Monsieur.
Jacques reminisces about his childhood and celebrates the bounty of the season. He cooks up a batch of ratatouille that can be served two ways. While it’s perfectly delicious on its own, Jacques serves it with pasta in Ratatouille with Penne. Seafood stars in Shrimp with Cabbage and Red Caviar, and delicate peaches end the show in Jacques’ classically prepared Peach Melba.

seconds before he plate that it looks so rustic… and then as if with
magic, it suddenly looks very sophisticated
I just made that shrimp dish and it is absolutely phenomenal. With mashed
potatoes from scratch about 20 minutes, all prep work included.
Is it not necessary to devein the shrimp?

One correction: a croque-madame usually refers not to a chicken sandwich
but to a croque-monsieur with an egg on top.
Love this segment….he presents it in a very simple way and easy to
understand…
