Vegan Waffles
Ingredients
2 cups all-purpose flour whole wheat pastry flour
1 cup whole wheat flour
2 1/2 cups soy milk
2 TBSP canola oil
1/4 cup brown sugar
1 tsp baking powder
1/4 tsp salt
Directions
Preheat waffle iron.
Combine dry ingredients and whisk.
Combine wet ingredients and whisk.
Add wet ingredients into the dry and combine by gently mixing with a fork. (No need to bust out the electric mixer here, patient gentle mixing makes the best consistency.)
Pour batter into the hot waffle iron and cook until golden brown.
Top with your favorite toppings like: syrup, fruit sauce or peanut-butter & apples sauce. Enjoy!
