Tuscany Chicken
Food Ingredients:
1 teaspoon olive oil 4 boneless skinless chicken breast halves (4 oz ea) 2 tomatoes diced 1 garlic clove minced 2 tablespoons red wine vinegar 2 tablespoons water 2 tablespoons minced fresh basil
Recipe preparation:
1 In a large no-stick frying pan over medium heat, warm the oil for 1 minute. Add the chicken and saute for 5 minutes per side. Remove to a plate. 2 Add the tomatoes, garlic, vinegar and water to the pan. Cover and cook for 5 minutes, or until the tomatoes are softened and have given up some of their juice. 3 Add the chicken, cover, and cook for 5 minutes, or until the chicken is cooked through. Sprinkle with the basil. 4 This recipe yields 4 servings. 5 Comments:This recipe uses ingredients favored by Italian cooks, including tomatoes, olive oil, basil and garlic.
