Absolutely wonderful! And I seem to have plenty of extra zucchini around this time of year, demanding to be used. I've got to give this a try!

As always Jeremy, I love the close up shots. I caught myself leaning forward as the pan was placed up on the stove top to have a smell. That is better than ANY food channel shots. They have never got me to do that. You know you did it right when an image can trigger that response!!! I don't even like zucchini that much. I grow them, but I give them away and don't eat them. I always have too many and some grow huge with big seeds. I was wondering if this recipe would work on the end of season large old zucchinis? The worst that could happen is you scoop out the meat like you would scoop out the seeds. I wouldn't put the seed part back in.
