Slow Cooker Sunday: Jen’s Chicken and Pasta Soup Recipe

In this video, I’ve shared my chicken and pasta soup recipe with you. I think you will enjoy this hearty soup made with simple ingredients. The chicken is so tender from slow cooking all day. It tastes even better reheated the next day. I love making enough to have leftover soup for lunches throughout the week. You can easily make this gluten free, if needed.

Jen’s Slow Cooker Chicken and Pasta Soup

8 cups chicken broth
4 large frozen boneless skinless chicken breasts
1 cup chopped onion
4 medium sliced carrots
2 cloves garlic, minced
2 bay leaves
1 teaspoon dried thyme
1/4 cup fresh flat leaf parsley, coarsely chopped
4 teaspoons salt
1/2-1 teaspoon freshly ground pepper
2 cups small shell pasta

Place chicken in slow cooker. Pour all other ingredients except pasta over chicken. Cook on high for 6 ½ to 7 hours. Remove chicken and coarsely chop. Add chicken back to slow cooker. Adjust seasonings, if desired. Add 2 cups small shell pasta and continue to cook for 30-45 minutes.

    Was that GF she’ll pasta? I have been looking for that. Where did you find
    it? I have found other shapes just not shells

    Hi Jen! Making this today and wondering if everything is fully cooked after
    the 7 hours. I want to make my pasta separately, but didn’t know if the
    chicken needed that extra 30-45 minutes to finish cooking or if technically
    the chicken was done by then. Hopefully you see this before tonight lol.
