Watch as Better Homes and Gardens shows you how to make slow cooker chicken topped with a creamy, homemade Greek yogurt sauce! The rub for the this chicken breast recipe includes stirring together half a clove of minced garlic, one teaspoon of dried oregano, one teaspoon of shredded lemon peel, a quarter teaspoon of salt, and a quarter teaspoon of pepper. Rub this mixture on all sides of the chicken before placing it in your slow cooker. Pour chicken broth down the sides of the slow cooker, making sure not to wash away the seasoning. This is where the crock pot chicken will get all of its delicious flavoring. You have the option of setting this slow cooker meal on high heat for two hours or low heat for four hours. While the chicken is cooking thoroughly, begin preparing the Greek yogurt sauce. Shred two tablespoons of cucumber into a medium bowl. Combine this with 6 ounces of plain fat-free Greek yogurt, one tablespoon of chopped mint, and the remaining garlic from the chicken seasoning. Season to taste with salt, and cover and chill the bowl. Moving on to the cucumber salad side dish, slice or chop the remaining cucumber. In a bowl, mix the cucumber with two tablespoons of olive oil and one tablespoon of lemon juice, seasoning to taste with salt. Toss everything to combine before covering the bowl and placing in the refrigerator to chill. Turn your attention back to the crock pot and remove the slow cooker chicken, discarding the extra liquid. Serve with a dollop of the minty yogurt for delectable Greek yogurt chicken.
