    so many schoolboy errors that i do not know where to start. Did he go to
    catering college? He didn’t even brown the meat as he made the error of
    crowding the pan. shd have browned in properly in batches.. it looked
    anemic.

    this guy is out of his mind. brown the meat first, then do the veg, with
    all the water of the veg in the pan how does he think to brown the meat
    properly, and not to mention he massively crowded his pan. just no no no no
    no

    Sorry but Nick Jim was correct. Maybe its best to correct a chef to help
    those who want to make this right. The meat would never caramelize with all
    that liquid from the veggies, and yes the pan was way over crowed. Also if
    you brown the meant in an empty pan you get well browned meat and also some
    great “Fond” on the bottom of the pan. You can add great flavor to your
    veggies in it, then lift it, or you can add broth, wine or water to it to
    lift it to your pot without veggies and add to your crock pot.

    Yes way watery..gotta use a Rue..I usually dust my stew meat in flour
    before I brown it..then thickens later..also a McCormick brown gravy
    packet..drop the celery too..

    I modified my recipe slightly, basing the searing/caramelization method on
    this video as well as adding bay leaves. I dispensed with the onions and
    instead used inch sliced chives. I also cut down on the spices (personal
    taste).

    I have no doubt this recipe turns out phenomenal but I love my recipe,
    which is a creamy rustic stew. This video helped me come very close to
    perfecting it, thank you

    chef, but it is amazing how mean people can be when they are hiding behind

    Way to watery for stew if you ask me! My stew is thick in sauce, the way
    stew should be. This should be called soup-stew.

    I’ve just obtained a slo-cooker and have already used it 2x and love it.
    I haven’t needed to brown the meat, or veg.
    I found this recipe useful and think I’ll use more in the way of herbs etc.
    next time round.
    I didn’t notice the use of any thickening agent and although he mentioned
    “low sodium,” a number of times, he seemed to be pretty free and easy with
    the salt!
    For me, that’s never a problem I’m not convinced that there’s any real
    issue with salt..sugar, in large quantities, for me, is an entirely
    different matter.

    No No No get your bag(storage bag size) put 1/2 cup flour-1-2 teaspoons
    salt pepper, take your cubed meat place in bag, shake to coat. Then Fry the
    meat on HIGH until browned. Throw your veggies in the crock pot add bay
    leaf salt pepper thyme oregano then put your browned beef into the crock
    pot and let it cook for 6-8 hours on low. the flour will thicken your soup
    while it cooks top with cheese and serve with dinner rolls ….DONE! and
    Delicious!

    You can’t caramelize meat, it has no sugar.

    It seems to me that the whole point of a crock pot is to put all of the
    ingredients in and let the slow cooker do the work while you’re away. I
    thought he should’ve just finished cooking the stew he started on the stove.

    Yes you can use beef stock or beef base but careful because it has a lot of
    salt and it us always earlier to add salt than to try and take it out and
    yes top it with jack or cheddar cubed or shredded and serve with Sara Lee
    dinner rolls perfect on a cold fall or winter nite

    its not stew either its more of a soup. yo shuld put either flour or corn
    starch to thicken it. They call it a stew for a reason.

    cook everything then again in the slow cooker??

    you gotta use flour to coat the beef then fry it on high to sear the juices
    in, the soup will thicken by itself because you use the flour when you
    fryed your beef.
