This is definitely a favorite at the Bananiac HQ! This homemade vegan rice & bean mexican / chipotle inspired recipe is quick and simple for anyone to prepare. This recipe is a high carb, low fat plant-based vegan recipe so can eat as much as you want! WOOHOO!!! And don’t be to add a bit of salt, salsa, hot sauce, or guacamole if you’re up for it 😉 Enjoy!

    I loveee rice and beans! Today I’m eating mine separately, eating my rice
    and veggies right now, and I’m making an oil-free bean dip to eat with some
    veggies later on. I do loved them combined together as well!

    If there’s going to be liquid to pour off the beans and vegetables,
    wouldn’t it be better to add the spices after draining, not before, so
    you’re not just pouring your spices down the drain?

    Great recipe. I was once told that we eat with our eyes, particularly
    colours – you certainly hit the spot there. I’d love to see other recipes
    you might have. Just had a thought, what do your tutors and classmates
