Seafood Saganaki

Food Ingredients:
3 tablespoons olive oil cup onion, chopped 3 clvs garlic, chopped 5 lrgs bay scallops 5 jumbo shrimp 7 PEI mussel cup tomato, chopped 1 tablespoon fresh basil 5 ounces cleaned squid ounce dry white wine ounce pernod cup feta cheese, crumbled 1 salt and pepper, to taste parsley, for garnish

Recipe preparation:
1 Heat olive oil in pan. 2 Brown onion and garlic. 3 Add scallops, shrimp and mussels. 4 Saute for 3 minutes. 5 Add chopped tomato and basil. 6 Saute for 1 minute, then add squid. 7 Splash with white wine and Pernod. 8 Flambe if so desired. 9 Saute for 1-2 minutes, depending on heat of the pan, then add feta cheese. 10 Salt and pepper to taste. 11 Garnish with parsley.
