Roasted Potato Curry Recipe

Food Ingredients:
250 grams Potatoes- 1 Onion- big finely chopped 1 tablespoon Ginger- (finely chopped) 1 Green Chillies- finely chopped Turmeric powder- a pinch 1 teaspoon Curry Powder- Salt as required 2 tablespoons Oil- For the seasoning 1/2 teaspoon Mustard- 1/2 teaspoon Urad dal- Curry leaves- little

Recipe preparation:
1 Wash potatoes well, peel the skin and cut it into small cubes and keep it in water until ready to use, to prevent discoloration. 2 Heat oil in a pan, add the ingredients for seasoning .When mustard splutters, add onion and saute well till it becomes transparent. 3 Then add ginger, green chillies and saute for a few more minutes. 4 Drain the water well and add the potatoes, turmeric powder, salt and chillie powder. 5 Cook covered on low fire stirring from time to time to prevent the potatoes from getting burnt. 6 You can sprinkle very less water if needed)
