Roasted Chicken Sausage & Rosemary Vegetables | Recipe
INGREDIENTS:
• 1 lb Chicken Sausage
• 1/3 cup oil
• 2 sprigs rosemary
• 2 Garlic cloves
• 2 Bell peppers, cut into 1 inch strips
• 10 small red potatoes, quartered
• 1 bag shallots, quartered
DIRECTIONS:
1. Gently combine ground beef, carrots, scallions, ginger, soy sauce, and garlic (salt and pepper, to taste). Preheat oven for 350 F. Next, combine oil, rosemary & garlic in saucepan over medium heat for 15 minutes. Remove from heat after 15 minutes & discard garlic & rosemary.
2. Toss peppers, potatoes & onions in the rosemary, garlic infused oil. Place vegetable mixture into baking pan. Cook for 15 minutes.
3. Place chicken sausage links into the vegetable baking sheet & cook for 45 F minutes.
—Place chicken sausage on baking rack and place on top of roasting vegetables.
