Red Quinoa and Roasted Cauliflower Salad
Food Ingredients:
1 medium cauliflower 1 cup red quinoa 1/3 cup walnuts, chopped 1/4 cup dried apricots 1/3 cup feta cheese 3 green onions, thinly sliced 3 Tbsp. chopped parsley Salt and Pepper to taste 1 lemon Olive oil
Recipe preparation:
1 Cook the quinoa according to package directions. 2 Preheat the oven to 400 F 3 Cut head of cauliflower into florets. Toss with olive oil, salt and pepper and place on a baking sheet. Roast cauliflower for 20 minutes or until tender. 4 Meanwhile, crumble the cheese and chop the rest of the ingredients. 5 Mix them all together, sprinkle with some extra virgin olive oil and juice from 1/2 a lemon season to taste. 6 Serve warm or cold.
