Stuffed veggies can make an excellent main course if you stuff them with something substantial. For vegans and vegetarians, quinoa makes an excellent stuffing. It is higher in protein than wheat and rice and it is gluten free.

2-6 zucchinis sliced in half and hallowed out
1 cup cooked quinoa
1 diced tomato
2 cloves minced garlic
1 can white beans
1/2 cup shredded mozzarella
