Qatayef (Atayef) dough and fillings recipe وصفة عجينة وحشوة القطايف

Qatayef is one of my all time favorite middle eastern dessert. This is how I’ve been making them ever since I started making Qatayef instead of buying a ready made dough, and the results were always fantastic!

Qatayef ingredients:

The dough:
2 cups all-purpose flour
1 tbs corn starch
½ cup semolina
2 tbs sugar
1 tsp instant yeast
2 tsp baking powder
1 tbs orange blossom water
1 tsp vanilla extract
2 ½ cup warm water

Cheese filling:
200g unsalted cream cheese
6 tbs thick cream
2-4 tbs icing sugar

Walnuts filling:
1 cup crushed walnuts
1 tbs icing sugar
1 tsp cinnamon powder

مكونات القطايف:
العجين:
2 كوب طحين متعدد الاستعمالات
1 ملعقة طعام نشاء الذرة
½ كوب سميد
2 ملعقة طعام سكر
1 ملعقة صغيرة خميرة فورية
2 ملعقة صغيرة بيكنج باودر
1 ملعقة طعام ماء زهر
1 ملعقة صغيرة فانيليا
كوبين ونصف ماء دافئ

حشوة الجبنة:
200 غ جبنة غير مملحة كريمية
6 ملعقة طعام قشطة (قيمر)
2-4 ملعقة طعام سكر بودرة

حشوة الجوز:
1 كوب جوز مكسور
1 ملعقة طعام سكر بودرة
1 ملعقة صغيرة مسحوق القرفة

    Hi, I just discovered your videos and I love how you make them so simple and easy to follow! I'm going to try this recipe later today or tomorrow inshaAllah. I have a question though, I'm from the U.S. so would I use corn starch or corn flour? Thank you!
