    Great recipe. except i do a similar version with ground turkey. i don’t
    soak my bread crumbs.
    in a food processor i use half large tomato 5 or 6 baby carrots half med
    onion 3 cloves garlic half tsp each thyme, basil,
    salt and black pepper. i then add 1/2 cup Italian bread crumbs 1/3 cup
    Parmesan grated and 1/2 cup of oatmeal and
    one egg. to one pound ground turkey. make sure it’s moist when molding add
    3/4 cup of water to pan when baking.
    i add cut up potatoes carrots and zucchini and one med onion cut into 1/4s
    seasoned with tsp thyme basil garlic powder (salt and pepper to taste) mix
    with 1/4 canola oil
    add to a covered pan and bake for 35 to 40 minutes. at 400 you can use
    tomato sauce or brown gravy to cover meat loaf or not.
    P.S. if you use sauce just cover the meat and not the whole pan.

    nice recipe. I make my meatballs this similarly, but if you want to make
    it healthier, replace half of the bread crumbs with zucchini (asian style
    are the best since they are not bitter). Just use food processor or dice
    manually finely. They give out lots of water while cooking making
    meatballs/loaf super juicy and a lot healthier.

    There was no shrinkage, which may or may not be a good thing in prison.

    my biggest issue is that, for reasons that escape me, i like my food drier.
    not like…. sand and ash dry, but….
    anyhow, that’s the thing that kills me watching cooking videos, be it eggs,
    meat, whatever, the finished product has too much moisture. and i know
    that’s how it’s supposed to be, but like i said, God only knows why, but i
    need it cooked more and less moist
