Penne Pasta With Fresh Asparagus, Mozzarella, Spring Onions and Basil
Food Ingredients:
200 grams penne pasta 24 sticks of fresh asparagus 6 spring onions, chopped 2 large balls of mozzarella sliced Fresh basil Balsamic vinegar Olive oil Salt and pepper
Recipe preparation:
1 Bring a large pan of salted water to the boil and cook the pasta as per the instruction on the packet 2 Meanwhile bring another pan of water to the boil, when the water is boiling blanch the asparagus briefly, remove with tongs and leave to one side 3 Lightly oil a grill pan and cook the onions until tender, then add the asparagus, cook for about 8 minutes. 4 To serve, divide the pasta between the plates, then top with the onions, asparagus, mozzarella, fresh basil and pour over the oil and balsamic vinegar
