Pan-Seared Salmon W/ Orange-Miso Reduction

Food Ingredients:
For the salmon: 4 salmon filets (4 oz each) Salt and pepper Olive oil For the orange-miso reduction Olive oil 2 cloves garlic, minced 1 teaspoon grated ginger 1 Juice of orange 1/2 cup chicken stock 3 tablespoons mirin 2 tablespoons rice wine vinegar 1 tablespoon soy sauce 1 tablespoon white miso paste 2 teaspoons honey salt and pepper, to taste

Recipe preparation:
1 In a large skillet, heat some olive oil over med-high heat. 2 Season salmon fillets on each side with salt and pepper. 3 Pan-sear salmon on each side for 3-4 minutes. 4 In a medium saucepan, heat some olive oil over med-high heat. 5 Add garlic and ginger and saute until soft. 6 Stir in all the liquids (next 5 ingredients); bring to a boil. 7 Add miso paste and honey; whisk until well incorporated. 8 Reduce heat and let simmer uncovered until reduced by half and the sauce has a thick syrup-like consistency. 9 Salt and pepper to taste. 10 Drizzle reduction over each salmon fillets. 11 Optional: serve over sauteed leeks.
