Oregano Prawns
Food Ingredients:
625 grams large raw (tiger) prawns shelled and cleaned 2 thsp olive oil 1 juice of 1 lemon 3 tablespoons fresad 300 grams cooked peeled large (tiger) prawns 4 tablespoons extra virgin olive oil 1 juice of I lemon . 2 teaspoons horseradish relish or sauce 100 grams rocket washed
Recipe preparation:
1 If using frozen prawns ensure they are defrosted and absolutely dry. 2 Place in a bowl. 3 Whisk together the oil lemon juice and horseradish. 4 Season with salt and pepper to taste adding more horseradish depending on the strength of your jar of relish or sauce. 5 Pour over the prawns and leave to marinate for at least one hour somewhere cool but preferably not in the fridge. 6 Stir occasionally to coat the prawns. 7 Just before serving place the rocket in a large shallow salad bowl then pour the prawns and their marinade over the top. 8 Toss gently together 9 If you are using wasabi instead of horseradish use about half the amount. Offer plenty of warm crusty bread with this salad to dunk in the dressing. 10 Serves 4
