Old-Fashioned Apple Bread

Food Ingredients:
1 1/2 c.s (about 2 med.) coarsely grated raw apples 2 tbsp.s lemon juice 3 c.s unsifted all-purpose flour 1 1/2 tsp.s baking soda 1 tsp. salt 2 1/2 tsp.s pumpkin pie spice 1/2 tsp. ground cardamon 3/4 c. shortening, room temperature 1 1/4 c.s packed brown sugar 3 eggs, room temperature 1 1/2 tsp.s vanilla 3/4 c. strong tea, room temperature 1/2 c. chopped nuts 1/2 c. chopped raisins

Recipe preparation:
1 Peel apples before grating, mix with lemon juice and set aside. 2 Combine flour, baking soda, salt and spices; mix thoroughly and set aside. 3 Cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Stir in grated apples with liquid and vanilla. Stir in flour mixture alternating with tea. Stir in walnuts and raisins with last addition of dry ingredients. 4 Pour into 2 greased 8 x 4 inch loaf pans. Bake in preheated 350 degree oven for 1 hour or until done. Let stand 5 minutes, then remove from pans and cool on wire rack. Serve warm or cold with cream cheese or butter.
