Okara with Chicken and Vegetables – Asian Food Recipes

Recipe ingredients and directions:

2 cup okara (soybean residue)

1/3 cup boneless chicken meat, chopped

2 dried mushrooms

1/4 cup string beans, diced

1 med. carrot, sliced into julienne strips

1 Tbsp soy sauce

2 Tbsp sugar

1 tsp salt

dash of MSG (optional)

1 Tbsp oil for frying

2 stalks green onion, chopped

Soak dried mushrooms in 1/2 cup warm water for 15 minutes. Remove

stems. Squeeze mushrooms reserving water and chop. Combine chicken,

mushrooms, vegetables, and seasoning with the mushroom water in

saucepan and cook over low heat for 8 minutes. Set aside. Heat

frying pan and add oil. Add okara, stir constantly. Add cooked

mixture. Cook about 4 minutes more on low heat until well heated

throughout. Stir constantly to prevent burning. Add chopped green

onion just before removing from heat. Mix together and serve.
