Mixed Fruit Compote
Food Ingredients:
1/2 cup Sugar cup Water 1/2 Vanilla bean, split lengthwise 1 1/2 teaspoons Fresh lime juice 2 cups Assorted fresh fruit
Recipe preparation:
1 Combine sugar and water in heavy small saucepan. Scrape seeds from vanilla bean into pan; add bean. Stir over low heat until sugar dissolves. Increase heat to high; boil 1 minute. Cool syrup. Transfer to bowl. Discard vanilla bean. Mix juice into syrup. Cover; chill until cold, at least 1 hour or overnight. Mix in fruit. 2 Serves 4.
