I was sceptical, but this was actually frigging delicious! One problem though… had it about 3 hours ago and I'm already hungry! Am I doing something wrong? It's 10 PM so don't really want to eat :(

You keep repeating "zero calories", but whatever the label may say these noodles are not zero calories.
They are somewhere between 6 and 20 calories per 100 grams, it is possible that you do not care about that but for me every calorie counts.
The ones with tofu in the mix (they will be opaque white or cream coloured as opposed to the translucent colour of normal konnyaku noodles) are even higher in calories.
The reason why your nutrition label may say zero calories is because of labeling laws. In some places companies are allowed to round down the calorie count stated on the nutrition label.
5 or less can be called zero, 50 or less can be deducted 5 calories and more than 50 can be rounded down 10 calories.
This is not allowed in a lot of places (like europe for example) so my brand of konnyaku noodles says 6,4 calories per 100 grams and another brand that I buy when the other one is not available is 20 calories per 100 grams.

Can you either post the recipe or fix the bad link to your blog where the recipe is posted?  It looks yummy.  Would like to try it.

How long are you supposed to cook the veggies for before adding in the noodles?  And then how long do you cook for after adding in the noodles?

    Cassey, a couple of things:
    1. The link to the recipe on your blog is not working.
    2. I tried your recipe and it is fu***ng DELICIOUS. This was my first time trying these noodles, and I am so glad I tried your recipe first –I am a fan! Whoohoo! I will definitely be giving you're other recipes a try. Great job.

I made this just now (used coconut aminos instead of soy sauce… normal sugar but I would use stevia if I had it) and it was incredible. Thank you for this wonderful recipe.

maybe you could use the PB2 powdered peanut butter with water added to make the sauce even less calories. I use it in other recipes as well. :-)
