Mina’s Famous Vegetarian Pie Recipe Demonstration – Cooking With Mina
No one can resist homemade pie. And a good pie is hard to find.
I always wanted to make a vegetarian pie that when you bite into it you want more. After trial and error I came out with this beautiful vegetarian pie. The best thing of this recipe is, it is easy, simple and bursting with flavor.
I have made these pies so many times and everyone loves it including picky kids. This vegetarian pie has earned me a nick name “a Pie Lady”.
The ingredients are so simple but it works! I used sweet potato, potato, carrot and peas. I steamed the roots vegies till it soft then cook it. Steaming is a very gentle cooking method, and doesn’t involve any water loss, which in general tends to maximize nutrient content, taste and enhance the flavor. Steaming also helps cutting down the cooking time which is important to retain the natural flavor. You can’t skip this step.
You have to use butter instead of oil, generous amount of black pepper and soya sauce for seasoning. This filling can be made one day in advance. For the crust I used shortcrust pastry and puff pastry.
It tastes great hot, warm or cold so you can make it well ahead. These pies also freeze beautifully.
