this time, our apartment was graced by the presence of michel bras, arguably the world’s most honored chef, cooking an exclusive meal for us and food & wine magazine. in attendance was also top chef’s tom colliccio, still learning from his former teacher. this night was magical and capped by this extraordinary man who tells you of his waking at 3am in his native village to go fetch some mushrooms, alone, because he “needs to take them home himself…”

wow, that’s a pretty aggressive comment… first of all, i’m french and
secondly, food and wine called me to see if they could use my apt to host
mr. bras’ knife launch accompanied by a dinner. guess what? i said YES.
@daarribas It allows you to peel the skin off of the pepper, the charring
also gives the flesh a faint and pleasant taste.
